The meat and staple of this tasty meal was a two pound pork tenderloin that was treated with a rub mixture of dry spices; rosemary, thyme, and sage. The tenderloin was then baked in the oven using our roasting pan, a housewarming gift from Ellen Justice (the pan, not the pork). After allowing the pork to rest it turned out perfect; tender and juicy on the inside with a nice crust on the outside.
The sides dishes to this delicious meal were just as tasty. My personal favorite was corn-off-the-cob. Nothing beats having fresh sweet corn during the summer and it's even better after being cut off the cob. A small pat of butter and some salt make the corn a perfect side dish. The next side was a veggie dish that is one of Brigitte's all time favorites. It consists of tomatoes, onion, and cucumbers sliced up and drenched in apple cider vinegar. The third dish was another veggie creation of stewed fresh squash with minced onions. The squash came directly from the Ashley farm in Chester, SC. The fourth side dish for the illustrious meal was classic mac & cheese. Though not homemade, it was made with whole wheat pasta and was a perfect complement to our meal.
The meal's finale was the dessert, everyone's favorite. Our dessert of choice was a summer time classic; strawberries and pound cake topped with whip cream. Sweet and light.
Not to be left out the boys had their own special dessert, FROSTY PAWS!!!!
Due to the numerous comments I have received for our beverages of choice for this meal, I felt the need to include them. Brigitte enjoyed wine from Lowcountry Winery and I indulged in some blue ribbon quality PBR.
